Honey - Meli O Kaimu

Scott Heartrick had been working with bees for about ten years when he started his own company, Meli O Kaimu (Raw Hawaiian Honey) with his partner Charlie Ghandour in the remote area of Kalapana on the Big Island. Scott and Charlie harvest their honey once a month. This allows them to cultivate a wide range of honey types depending on the time of year and the trees that are blooming. Most bee keepers harvest their honey only every six months. This allows a lot of honey to build up in the hives and subsequently produces a combination honey. Scott says it is a lot more work to harvest every thirty days but the result is well worth it. Like fine wine, the honey produced by Meli O Kaimu are as different as different vintages. They have nuances and subtlties reflecting the beautiful tropical flowers of their origins.

Scott and Charlie take turns bringing their honey to market twice a week to the Hilo Farmers Market. They are in the process of building a new honey house that will expedite their honey making, and may someday allow tours of their facility. They also talk about future projects like going into schools and teaching about the process of making honey in order to broaden the children's awareness and understanding of nature.
